In June 2025, the Michelin Guide Vietnam returned with its highly anticipated list of selected and starred restaurants across Hanoi, Da Nang, and Ho Chi Minh City . While many food lovers celebrated, others were puzzled by notable exclusions. Where are iconic dishes like cơm tấm (broken rice) and bún đậu mắm tôm (tofu with fermented shrimp paste)? These daily staples, eaten by millions across North and South Vietnam, didn’t appear at all. In their place? A heavy focus on phở —with over 20 shops listed—raising questions about whether the Michelin Guide truly represents the diversity of Vietnamese cuisine.
